This is a punchy, minimalist guacamole for people who want texture and flavor — not just mush. Underrated move: garnish your guac with cheese for an extra salty, creamy boost.

Juice two limes
Chop half of a bunch of cilantro
Dice the half onion
Remove the seeds and dice the jalapeño
Set these aside, ready for use
Halve avocados and dump flesh into a mixing bowl, discarding the pits.
Mash avocados with a fork until rough, but homogeneous. Add half the lime juice and a pinch of salt. Stir to combine.
Add half of the diced onion, half of the diced jalapeño and half of the chopped cilantro to your avocado mash.
Stir everything together, and taste using a tortilla chip. Adjust flavor by adding more onion, jalapeño, salt and lime juice to your liking.
Top with queso fresco and enjoy.
Will keep covered in an airtight container in the fridge for three days.
